How to Make Infused Cookies & Cream Popsicles with Original Pot Co. Cookies
Looking for creative ways to spruce up old edible classics like chocolate chip pot cookies? With the weather beginning to heat up, you may want to transform those simple pot cookies into cookies and cream popsicles. This recipe, designed by cannabis chef Monica Lo, creator of Sous Weed, is easy to execute and incorporates Original Pot Co. cookies, containing 10 mg of THC each. We caught up with Lo to learn more about Sous Weed and her approach to making edibles.
Describe what exactly Sous Weed is.
Sous Weed is a recipe blog, founded in 2015, dedicated to using cannabis as a superfood ingredient in the home kitchen. Sous Weed offers practical advice for both beginners and enthusiasts to holistically understand the use case of cannabis in their lives and create sous vide cannabis-infused dishes without mess, smell, or worry.
The sous vide method only sounds complicated but it’s really quite simple! Sous vide refers to the process of placing your ingredients in an airtight bag or jar and cooking it at an exact temperature in a pot of water. The process is clean, foolproof, and odorless. What’s more, the gentle cooking temperatures mean delicate terpenes and other beneficial cannabinoids will get infused as well, making edibles that taste delicious, rather than skunky, burnt, or acrid.
How did you get into working with cannabis in the kitchen?
Sous Weed began as a passion project to document my cannabis creations using the sous vide method. The interest first came from the need for holistic pain management when I herniated a disc. It was a struggle just getting out of bed and the doctor had me on all sorts of pain medications. I made the switch to cannabis because it was easier on my system and helped get me through my day-to-day tasks.
At the time, I had a strict landlord and I needed to be very discreet with the wafting scent of cannabis so a Crock-Pot or cooking on the stovetop was out of the question. I was the creative director of a sous vide startup and thought I’d put our machines to the test — it was a success! With the sous vide method, it was easy to make healthier edibles and customize the dosage to my needs.
So, are edibles your favorite mode of consumption, and if so, why?
100%. I love cooking and eating and I’m always finding fun ways to integrate cannabis into my meals. Consuming cannabis has a different effect than smoking or vaping. I much prefer the prolonged pain relief effects of edibles. Plus, I hate the smell of smoke in my hair, unless of course, it’s shampoo day.
What’s the advantage of working with an ingredient like Original Pot Co. that’s already a pre-made edible?
There are definitely advantages to using pre-made, lab-tested, and precisely-dosed ingredients in your recipes. It’s especially great if you’re a beginner and worry about being a little too heavy handed with your cannabis oil infusions. Using a pre-made edible, like Original Pot Co., as an ingredient in your recipe takes the guessing game out of accurately dosing each serving.
Why did you choose to work with Original Pot Co.? What are the benefits? What do you like best about this particular product?
I was first sent a box of cookies to try and I quite enjoyed the white chocolate macadamia. Cookies & cream is one of my favorite ice cream flavors and I wanted to make an adults-only, frozen treat that showcased all three Original Pot Co. flavors. One Original Pot Co. cookie is the legal beginner’s dose of 10mg, which I crumbled into each ice pop mold making perfect individual servings.
And without further adieu, what’s the recipe for the cookies and cream popsicles?
